Rice Vada | Chaula Bara | Crunchy Crispy Vada

These rice vadas (Odia – Chaula Bara) are very famous street food of Odisha. These crispy vadas are savoured with onions and fried chillis. Other popular varieties are dahi bara, dahi bara alu dum, bara guguni, bara alu dum.


Vadas can vary in size and taste depending on the various spices added. These small crispy vadas go very well with “ghuguni” (white peas curry). If you want it crunchy, fry it for some more time.

Rice Vada | Chaula Bara | Crunchy Crispy Vada


  • Rice / Chaula – 1 bowl
  • Urad Dal / Biri – 4 tbsp
  • Ajwain / Carom seeds – 2 tbsp
  • Cumin seeds – 2 tbsp
  • Salt – 2 tsp
  • Baking powder – 1 and ½ tsp
  • Oil – For deep fry


  1. Soak the rice, urad dal with 4 times as much water for 8 hours (or overnight).
  2. **Alternatively, soak the rice, urad dal in hot water with 1 tbsp baking powder for 2 hours.
  3. Grind the soaked rice, urad dal with bowl water to make smooth batter.
  4. Add ajwain, baking soda / baking powder, cumin seeds and salt. Mix well for 2 mins (try to make a lump-free batter).
  5. Place a pan on medium flame and add enough oil to deep fry the vada.
  6. Take some rice batter in your hand and carefully drop this in the hot oil or you can also use spoon to drop rice batter.
  7. Cook for 2 mins till the color starts changing to golden brown. Flip the rice vada and cook for 2 more mins.
  8. Repeat the same with the remaining batter.
  9. Serve it with tomato and chilli sauce.
