kheer | khiri | dessert

kheer is a special sweet dish, which is prepared all over India to during festivals and auspicious occasions. In Odisha “chaula khiri” is popular . Kheer, also called Ferenhi or Payesh or Kiru is a rice pudding from the cuisine of the Indian and Iran, it is made by boiling rice or wheat or tapioca (or vermicelli) with milk and sugar. It is flavored with cardamom, raisins, saffron, cashews, almonds. It is typically served as a dessert. It is also known in some regions as payesh, payasam, payasa, phirni, chaula khiri and gil-e-firdaus. kheer has a lot of different names in different part of India but what ever the name is, we love rice kheer for it’s flavor and divine taste  :)

Ingredients

  • basmati rice - 1/2 cup
  • sugar - 1/2 cup
  • milk - 2 cup
  • bay leaves - 4
  • cashew nut - 14 to 16
  • raisin - 15 to 20
  • green cardamom - 5
  • saffron - 4 to 6 string
  • cow's ghee - 4 tbsp
  • almonds - 5(cut in slice)

Instructions

  1. wash and soak the basmati rice for 20 mins (minimum).Then drain all the excess water and keep it aside. crack 10 cashew nuts and keep aside.
  2. place a pressure cooker on medium flame; once hot add 3 tbsp ghee, 1 tbsp sugar, bay leaves, green cardamom and saute for a min.
  3. add the soaked basmati rice and saute for 2 mins.
  4. now add cracked cashew nuts, remaining sugar, 1 cup milk and close the lid tightly for 3 to 4 whistle (or up to 15 mins).
  5. now place a pan on medium heat with a tbsp of ghee, once hot add remaining cashew nuts and raisins.
  6. saute them for a min (up to the raisin pops up) then keep it a side in a plate.
  7. open the pressure cooker (if rice is not cooked well then close the lid again for 2 more whistles) and add one cup milk and saffron and mix well.
  8. allow the rice kheer to boil for about 5 mins (continuously saute them otherwise they will stick on the bottom).
  9. now mix the fried cashew, raisins, sliced almonds and serve hot. kheer can also be kept in fridge for 2-3 days. It is delicious even out of fridge.

Notes

if you have a sweet tooth, please add more sugar as per taste.
